Technically, LOVE ~destiny~ was done by Ken Hirai a while back. However, that was also a tsunku-made track. Maybe there's something that prevents people from covering Ayu specifically for cover albums and not just unofficially at concerts or online videos.

She is probably too prevalent among other artists for having homenages being paid
