"Acoustic Orchestra" is a very, very general term when it comes to Ayumi. It describes pretty much every rearrangement that includes strings.
While most "Classical" versions are closer to older styles of music, the styles commonly referred to as "Classical Music"(in reality, "Classical" is just one of several eras of music, but it is often used as umbrella term for all of them) nowadays. Most of Ayumi's "Classical" versions rely ONLY on a Symphonic Orchestra and have more elaborate, full arrangements than her "Acoustic Orchestra" versions.

"Acoustic Orchestra" -> modern, simple arrangement with some strings.
"Classical" -> elaborate, complex arrangement similar to music styles from the late Middle Ages and Renaissance.
