Jack Johnson is very acoustic, sometimes a bit folk-y, and has some very chilled-out songs. I suggest "Banana Pancakes" and "Upside Down".
The Cranberries were very coffee-house-y too. A lot of nice mellow rock from the early-mid 90s was. "Linger", "Dreams", "Ode to My Family". They are slightly depressing, but really beautiful and calming.
Emma Bunton's album "Free Me" was very loungey and jazzy. It is soothing. This is the kind of music I would like to play as I make dinner.
Definitely Corinne Bailey Rae, though. She's great.

I'd recommend these too although I'm not exactly sure what you want. Do you mean the kind if music they play in elevators and malls and hotel receptions? Cos I'm looking for
that kind of music.
EDIT: OMG, WIKI IS GOD. Elevator music is the kind of stuff they play on The Sims, it's called muzak.
