^In the preferences thing, you can choose the setting at which you want to rip your music...

I don't remember what the default setting is...when I first had itunes I know it was at 128 kbps lol

but it might have gone up to 256 since then...but you can change it to 320, and also choose the format. I like apple lossless but the files are huge lol
